The purpose this study was to determine effect drying times quality Nutrient Mineral Pinctada penguin in Buton Strait. research design used a completely randomized with four treatments replications, each replication consisting 400 grams penguin. sample dried at 120 0 C 15, 30, 45 minutes treatment. Then analysis carried out see levels calcium (Ca), Iron (Fe), Zinc (Zn), Protein, Fat, Phosphorus (P), Potassium (K), Iodine (I). data analyzed using variance (ANOVA) based RAL SPSS standard. If treatment has significant effect, further tests are Duncan Multiple Range Test.
